Preheat oven to 350°F (175°C). Season pork ribs generously with salt and pepper. Place ribs in a roasting pan and bake for 1 hour, or until browned and partially cooked.
While ribs are baking, peel and core the pineapple. Cut pineapple into 1-inch chunks.
In a saucepan, combine the pineapple chunks, chopped green onions (reserve some for garnish), and your favorite sweet and sour sauce ingredients (e.g. soy sauce, brown sugar, rice vinegar, ginger, garlic). Bring to a simmer and cook for 15 minutes, or until sauce thickens slightly.
Remove pork ribs from the oven. Pour the pineapple sweet and sour sauce over the ribs, ensuring they are well coated. Return the pan to the oven and continue baking for another 30-45 minutes, or until ribs are tender and glazed.
Remove ribs from the oven and garnish with sesame seeds and the remaining chopped green onions.
For more tender ribs, consider parboiling or slow-cooking them before baking.
Adjust the sweetness and sourness of the sauce to your liking by adding more brown sugar or vinegar.
If you don't have fresh pineapple, canned pineapple chunks can be used as a substitute. Be sure to drain them well before adding them to the sauce.
