A savory and flavorful stir-fry with noodles, pork, mushrooms, and fresh vegetables.
Cut the pork into thin strips. Marinate with 1 tbsp soy sauce for 10 minutes.
Cook noodles according to package directions until al dente. Drain and rinse with cold water to prevent sticking.
Whisk eggs with a pinch of salt and pepper. Heat a skillet with a little oil and scramble the eggs until cooked through. Remove from skillet and set aside.
Slice mushrooms, celery, and green onions. Heat a wok or large skillet over medium-high heat with a little oil. Add mushrooms and celery and stir-fry for 2-3 minutes until slightly softened.
Add the marinated pork to the wok and stir-fry for 3-4 minutes until cooked through.
Add the cooked noodles, scrambled eggs, remaining soy sauce, and green onions to the wok. Stir-fry for 2-3 minutes, tossing everything together until heated through and well combined. Season with salt and pepper to taste.
If you like a spicier dish, add a pinch of red pepper flakes or a dash of chili oil.
You can substitute chicken, beef, or tofu for the pork.
For extra flavor, add a splash of sesame oil at the end.
