A savory and satisfying Taiwanese street food classic, Dan Bing is a thin, crispy crepe-like pancake made with eggs, scallions, and a simple batter. It's quick, easy, and perfect for breakfast, lunch, or a snack.
In a medium bowl, whisk together the flour, water, and salt until a smooth batter forms. Let it rest for 10 minutes.
Thinly slice the scallions, separating the white and green parts.
Lightly whisk the eggs in a separate bowl.
Heat 1 tablespoon of oil in a nonstick skillet over medium heat.
Pour 1/4 cup of batter into the hot skillet, swirling to create a thin, even crepe.
Immediately pour half of the whisked egg over the crepe and sprinkle with half of the white parts of the scallions.
Cook for 2-3 minutes, or until the egg is set and the edges of the crepe start to brown.
Carefully flip the dan bing and cook for another minute on the other side.
Slide the cooked dan bing onto a plate and brush with your desired sauce. Repeat the process with the remaining batter, egg, and scallions.
For extra flavor, add a dash of white pepper to the batter.
Serve with your favorite Taiwanese sauces, such as sweet soy sauce, chili sauce, or hot sauce.
Don't overcrowd the pan. Cook the dan bings one at a time for best results.
If you want a crispier dan bing, cook it for a little longer on each side.
