A savory and flavorful stir-fry featuring tender chicken, earthy mushrooms, and aromatic garlic and green onions.
Cut chicken into bite-sized pieces. Marinate in 1 tbsp soy sauce, 1 tbsp cornstarch, and a pinch of black pepper for 15 minutes.
Mince garlic.
Chop green onions, separating white and green parts.
Slice mushrooms.
Heat 1 tbsp oil in a wok or large skillet over medium-high heat. Add chicken and stir-fry until cooked through and browned, about 5-7 minutes.
Add mushrooms and white parts of green onions to the wok. Stir-fry for 3-5 minutes until mushrooms are softened.
Return chicken to the wok. Add 2 tbsp soy sauce, 1 tbsp oyster sauce (optional), and a pinch of sugar. Stir-fry for another minute until well combined.
Garnish with green parts of green onions.
Serve hot with steamed rice or noodles.
For a spicier dish, add a pinch of red pepper flakes.
Feel free to add other vegetables like bell peppers or broccoli.
