Cooking Steps

Trim any sinew and fat from the beef. Finely chop the beef into small pieces using a sharp knife. Alternatively, you can coarsely grind the beef. Place the chopped beef in a bowl and refrigerate for at least 30 minutes to chill thoroughly.

Finely chop the shallots, capers, and parsley. Add them to the bowl with the chilled beef.

In a separate small bowl, gently whisk together the egg yolk, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper.

Pour the egg yolk mixture over the beef mixture and gently mix everything together until well combined.
